Xingyi Shuabatou Dumpling first emerged in the Tongzhi years of the Qing Dynasty. The dumpling looks like a bamboo broom, hence the name. First, make a sheet of filo pastry, then put meat stuffing on the pastry and roll it and steam it in the pot. The delicious dumpling goes with chicken soup and a special sauce made of soy sauce, pepper and green onion.
