The Dong nationality often feed the bulls some Chinese herb medicines such as fleece-flower root, Codonopsis,Chinese angelica before butcher them. After about half an hour, they take out the undigested herb in the bull’s stomach and cook it together with fresh beef. The green-yellow dish tastes a little bitter but it has the function to clear away internal heat and help digest greasy food. Therefore, Niu Bie is considered a rare food for the Dong people to treat their guests.
